Broccoli Cheese Salad

Friday, December 26, 2008

Well, the post wasn't up but a few minutes and the requests came in for the recipe. I got the recipe from a dear friend, Peggy (in MD) about 10 years ago and it's been my favorite for potlucks. Easy, good for you and always a hit. You can make low fat and sugar free by replacing a few items. Enjoy!

Broccoli Cheese Salad

2 bunches of broccoli, remove stems
2 cup shredded sharp cheddar cheese
1 red onion, chopped
12 slices of bacon, crumbled
1 cup mayonnaise
2 Tbsp white vinegar
1/2 cup sugar

In a medium bowl, mix broccoli, cheese, onion and crumbled bacon. set aside. Mix mayonnaise, vinegar and sugar until dissolved. pour over and mix with other ingredients. Cover and store in refrigerator until ready to serve. Overnight is best but not necessary.

Prep time: about 30 minutes
Serves 6-12

  5. Sounds delicious! We gotta make it soon. We love fresh broccoli (sometimes even when it's lightly steamed)and have eaten a broccoli cole slaw that was very good. This will top the charts!

  6. I'll have to try your version; mine is similar but I leave out the cheese and add chopped cashews--less "bad" fat, more crunch.
